Strawberry Lemonade Muffins

With summer coming to an end I wanted to experiment with some new recipes for Labor Day Weekend. I had some strawberries and lemons laying around and a great idea came to me! Why not combine the two and make Strawberry Lemonade Muffins! These are a healthy alternative to normal muffins and are also gluten free! Have a safe weekend!

1/4 cup oil
1 egg
1 juiced lemon
1/2 cup almond milk
1 1/2 cups gluten free flour
1/2 tsp salt
1 tsp baking powder
1/2 cup Sugar or Splenda
1/4 cup brown sugar or brown sugar substitute
1 cup chopped strawberries

1. Mix the oil, egg, lemon, and almond milk
2. Mix the flour, baking soda, salt, and sugars
3. Mix in the strawberries
4. Line cupcake molds and bake on 375F for 25 minutes
